Salmon and philly omelette

This has become a breakfast favourite of mine. It is very filling and super tasty.

Serves 1 (approx 180 cal per serve)

Ingredients
1 whole egg
1 egg white
25g smoked salmon
25g extra light Philadelphia cream cheese


Method
1. Heat a small pan over medium heat. You might need to lightly oil your pan if it isn't non-stick.
2. Lightly whisk whole egg and egg white. I prefer to use a fork.
3. Pour whisked egg in pan. It will work best if your pan is already warm.
4. Shred bits of smoked salmon (with your hands) and scatter over egg in pan.
5. Add small dollops of philly.


6. Once the egg is mostly cooked through, flip half the omelette over - this will help seal the philly and salmon in the omelette.
7. Cook for another 30 seconds or until you think the mixture is cooked through and serve!


I haven't had any on hand lately, but adding a small amount of dill could also be nice.

And if you want a larger serve, add more egg whites. It will make the portion larger without adding too many calories.
