Serves 1 (approx 300 calories)
Ingredients
150g tomatoes (a mix of varieties is more interesting, but just use whatever you can get your hands on)
50g feta
Small tin of tuna (95g)
Handful of basil leaves
4-5 walnuts
Method
1. Finely chop basil and walnut in a food processor or with a stick mixer
2. Chop tomatoes (I used smaller tomatoes and cut them into quarters, but you may need to dice larger tomatoes)
3. Combine tomatoes, tuna, and basil/walnut mix in a bowl and mix well
4. Crumble feta over the top
It's a great work lunch, but does need to be refrigerated throughout the day.
